We are looking for a Chef to a "new" gastropub, in Havelock.
The Captain's Daughter is a gastropub In Havelock, a small town, and gateway to Abel Tasman National Park, Nelson Lakes, the West Coast Road and the Pelorus Sounds, in Marlborough’s wine country.
The restaurant has just changed hands and the new owners are looking forward to establishing the restaurant as a destination for people to come and enjoy quality local and NZ food sources in a relaxed atmosphere, focusing on non-fast food, quality, and slow food. Burger and fish and chip “chefs” need not apply.
We are looking for a Chef with experience, who knows how to make classic sauces from scratch and memory, and knows how to monitor the temperatures of fish and meat.
Experience with braising, real BBQ, smoking and curing of meat and fish. Delicate salads, making pasta by hand, gratin potatoes, steaks cooked over charcoal, making stocks from scratch…clear stocks bursting with flavor. Sous –Vide experience would be very good. Knowledge of high-end convection steam ovens is a must.
He/she needs to be able to work alone as well as part of a team, handle good volumes and be hands-on. All tasks from prep, to cooking and washing the dishes, if needed.
The kitchen is getting some great new equipment to work with, a new menu is in place, offering simple and tasty gastropub options, made with prime and local products.
